Launching on 12th April, Chef Tristan Welch will open al fresco dining concept ‘Parker’s On The Piece’ on one of Cambridge’s most historic greens, Parker’s Piece

Parker’s Tavern, housed in Cambridge’s most historic hotel University Arms, will welcome guests to its outdoor dining concept, Parker’s On The Piece from 12th April 2021. With Chef Tristan Welch at the helm, al fresco dining will be available on one of the city’s most famous greens, Parker’s Piece (where the  first official game of football was played!).

In true Parker’s Tavern style, Parker’s On The Piece will focus on seasonal, locally sourced ingredients and great British classics with playful twists. Tristan has created a new menu made up of delicious hors d’oeuvres and brand new mains including Crispy Coronation Chicken Salad, Aubergine and Tomato Berkigiana slow-baked with British Berkswell cheese (a Parker’s take on Italian favourite, parmigiana) and Grilled Squid and Chips served with garlic butter and watercress salad. The gourmet sourdough pizzas are back again, with Spring flavours and ‘garden inspired’ toppings made in a traditional pizza oven. The indulgent and ever-popular Wiltshire truffle and cream cheese and the Lobster and garlic butter pizzas will return to the menu, alongside some new additions of Courgette, preserved lemon rosemary and Creamed spinach, nutmeg and chilli. Furthermore, the Parker’s G&T Afternoon Tea is a delightful addition to the menu. Pairing a refreshing G&T with sandwiches with unique fillings such as Cucumber and dill and Westcombe Cheddar with apple and beetroot chutney, as well as freshly baked scones with gin and raspberry jam, and sweet treats including Duke of Cambridge tart and of course Chef T’s house-made chocolate and sea salt truffles.

This year, guests can spend long lazy afternoons in the sunshine at Parker’s On The Piece, catching up with family and friends over refreshing cocktails, wine and beer.  The cocktail list has been created in partnership with Cambridge Gin Distillery, which prides itself on using the freshest botanicals and uses locally sourced, natural ingredients which perfectly complements the dining menu. The experts at the renowned distillery have developed innovative creations exclusively for Parker’s On The Piece including a Truffle Negroni, Sorbet Spritz, Bloomsbury Boozer, Cambridge Collins, PT Pimms and Elderflower Bellini.

About Parker’s Tavern

Parker’s Tavern opened in August 2018 as part of the new University Arms hotel in Cambridge. The destination restaurant is a beautiful and flamboyant restaurant where everything served has British origins, with ingredients provided by Cambridge and East Anglian producers. With views of Parker’s Piece, it was designed by designer du jour Martin Brudnizki to feel as though it belongs to Cambridge with the feel of a University college. There are 110 covers in the restaurant and 61 in the bar and the food menu consists of a selection of new modern classics, complimented by a seasonally changing menu.


About Tristan Welch

Following a long stint as Executive Chef at The Cotton House in Mustique, Tristan has returned to his hometown of Cambridge and is well and truly settled into his role as Chef Director of the exciting new restaurant, Parker’s Tavern. Beginning his training in London under Gary Rhodes, he joined Le Gavroche working under Michel Roux Jr, where he won the Award of Excellence from the Academy of Culinary Arts – a recognition of exceptional talent and ambition in young chefs.  A position in Paris at L’Arperge led him on to Scotland where, as Head Chef at the award-winning Glenapp Castle, he was awarded the prestigious Gordon Ramsay Scholarship Award. Tristan was then Head Chef at Gordon Ramsay’s Petrus at The Berkeley, before re-launching Launceston Place in Kensington.
